Opened Pickles

Several upon several weeks ago, I made 6 jars of pickles. Last year and the year before, I made pickles but there was a problem. I waited till I got enough to do a batch process rather than one at a time. This means I couldn’t experiment ’cause if I did it wrong, all of the jars would taste bad. The problem with that was, it tasted bad (soft ‘n potent) already but I still didn’t want to risk ruining the ruined. (if you know what I mean) This year, I decided to pick ‘em younger than last time. When I looked for them, I only found enough for one jar. Rather than wait till more grew (which meant those younger cucs would be too old), I decided to just can one jar at a time…

Well, today, we ate all the store pickles so I decided to open a jar of the home-made’s. I don’t like to open my pickles when we have a jar of store pickles open ’cause if mine don’t taste good, we’ll just eat the store pickles.

Well, I opened the first jar and we all took a bite. Wow! I couldn’t believe it. Not only did it actually taste good, it was crunchy! I cut down the salt and vinegar which helped immensely. Also, I put in garlic for the first time which made the flavor better.

Every year, some bluegrass friends of ours hold a potluck/picking party at their house and it’s been a tradition for me to bring a jar of home-made pickles ’cause I always had one or two jars in the pantry (’cause I didn’t want to eat ‘em). Well, this year, I may eat ‘em all before the next picking party. If I do run out, I’ll put the store pickles in a canning jar and tell ‘em it’s home made.
